Why not take advantage of that beautiful ocean and its free fish and lobster?! Granted you have to know how to catch something, I have people that can help you with that ;)
Head out just off the islands, go spearing and or fishing, and catch your evenings worth of dinner!
We caught these bad boys right off of Rose Island, a little simple preparation and lobster tacos were on the menu!
Check the video out below for a little quick and easy prep ( PG-13) - and I've added a recipe for your convenience :)
half a red onion
half a cup of white vinegar
1 tablespoon salt
1 goat pepper (optional, very spicy)
Half cup of mayo
4 chipotle peppers, chop them up, and you need the sauce
salt & pepper
2 lobster tails (8 oz.)
a table spoon of olive oil
salt & pepper to taste
Corn tortillas (La Tortilla is the best)
salt + pepper, to taste
1 avocado, pitted and peeled
Half a head of cabbage
Chopped Jalepenos (if you like it spicy!)
HERE'S HOW YOU DO IT:
Thinly slice the red onion, as long and skinny as possible- add it to the vinegar with the salt, let it marinade.
Chop up chipotle peppers, and take about a table spoon of the adobe sauce, throw it in a half a cup of mayo. Add plenty of lime (1-2) and salt and pepper to taste.
Grab a frying pan, throw some olive oil in it. As it warms up, make sure you cut and clean your lobster well. Slice & dice the lobster into cube sized pieces- throw it in the pan with garlic, salt & pepper- sauté it on low. Once cooked through, taste and add more salt & pepper as needed- add the lime as well.
Thinly slice the avocados, in strips.
Thinly slice the cabbage, as thin as possible
Chop up the cilantro.
Heat up the tortillas, assemble as noted below:
Tortilla, Chipotle mayo, lobster, cabbage, chipotle mayo (again), pickled onions, cilantro, a squirt of lime and dash of black pepper.
